Tomato Gazpacho – Summer recipe

Gazpacho Shot, San Marzano tomatoes, garlic, cucumber, Piquillo peppers, first press olive oil

Serves: 20 shots

INGREDIENTS

200g LARGE SAN MARZANO TOMATOES

1 GARLIC CLOVE

1/4 CUCUMBER

50g PIQUILLO PEPPERS NAVARRICCO

100ml OLIVE OIL

50ml SHERRY VINEGAR

pinch of SALT & PEPPER

 

METHOD

Put everything into a blander except salt, pepper & vinegar.

Season with salt, pepper & vinegar.

Better made the day before so flavours can soften before serving.
